Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare your baking dish by greasing it lightly with nonstick spray.
  2. In a medium skillet, heat a tablespoon of olive oil over medium heat and sauté the diced onion for about 5 minutes until translucent.
  3. In a large mixing bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, black pepper, and half of the grated Parmesan cheese. Mix thoroughly.
  4. Transfer the mixture into the prepared baking dish, shaping it into a loaf approximately 2 inches high.
  5. Sprinkle the remaining grated Parmesan cheese on top of the meatloaf.
  6. Bake in the preheated oven for 45 to 50 minutes, checking the internal temperature reaches 165°F (74°C).
  7. Let the meatloaf rest for 10 minutes before slicing.
  8. Slice the meatloaf and serve alongside your favorite sides.
